mix veggies in spinach gravy

1 tsp kasuri methi
salt to taste
1 tsp butter
1 medium onion
1 large tomato
1/2 tsp turmeric
3-4 green chillies (chopped)
120 gms spinach (chopped)
1 tsp cumin powder
1/2 tsp coriander powder
1 tsp lime juice
300 g mixed vegetables (carrot, peas, beans, mixed bell peppers)
1 tbsp garlic paste
1 inch ginger
Steam all the vegetables and keep aside.
Heat oil in a pan, add chopped onions, ginger & garlic. Cook till onion turns pink , then add chopped tomatoes and cook till tomatoes are soft.
Now add cumin powder, coriander powder, kasuri methi & turmeric and cook for 2 more minutes.
Switch off the flame and let it cool slightly. Now grind the mixture to a fine paste.
Now in the same pan heat butter, add chopped green chillies and cook for a minute, then add mixed vegetables.
Add the prepared paste, roughly chopped spinach leaves and cook on a medium flame till oil separates on the side.
Add lemon juice, mix well and remove from the flame. Serve hot.
