A classic potato side dish loaded with cumin and fresh herbs.

rock salt to taste
2 cups boiled potato (diced)
1/2 tbsp ginger finely chopped
1/2 tsp red chilli powder(optional)
2 green chilli (finely chopped, optional)
1 tsp cumin seeds
1/2 cup tomato (optional, finely chopped)
2 tbsp finely chopped coriander (optional)
1 tsp lemon juice
2 tsp ghee
Heat the ghee in a pan and add cumin seeds.
Now add green chillies and ginger and stir for a few seconds. Do not let it brown.
Sprinkle red chilli powder and give a quick stir.
Add tomatoes and cook on high heat for 3 mins. Add potatoes along with rock salt and toss them together.
Cook for 5mins and then sprinkle with chopped coriander.
Add the lemon juice, toss and remove.
